Chickpea, Quinoa and Rocket Salad

Ingredients
Salad
– 2 cups of rocket salad ICEBERG SALAT CENTAR
– 1 clove of garlic
– 1 cup cooked quinoa
– 3/4 cups of cooked chickpeas
– 3-4 radishes
– 1/4 cup chopped walnuts
– 1 tbsp. fresh dill
– 1 tbsp. fresh basil
– 1/4 cups tofu cheese with dill
– a pinch of Himalayan salt
– a pinch of ground black pepper
Dressing
– 2 tbsp. of walnut oil
– 1 tbsp. olive oil
– juice of 1 lemon
– 1 clove of garlic
– 1 tsp. honey
– a pinch of Himalayan salt
– a pile of ground black pepper

Directions
1. In a cup, combine all the ingredients for the dressing.
2. In a large bowl, mix chopped radish, minced garlic, rocket salad, walnuts, quinoa, chickpeas, dill, basil and tofu.
3. Pour dressing over salad and toss.
