Zucchini and Pumpkin Pottage

Moms, how often do you give your kids soup or pottage before the main meal? Do you know that pottage is the easiest way to “hide” a load of veggies your kids would normally not eat? It is a type of creamy chowder with a combination of vegetables and spices, no flour or starch is used to thicken it. Instead, the basis of each pottage are potatoes which give it its creamy and delicious structure. Therefore, pottages are extremely healthy and vitamin-packed.

These hot summer temperatures inspired us to come up with a recipe for a light zucchini and pumpkin pottage we want to share with you. Leave us your impressions in the comments bellow!

Ingredients
(4 portions)
– 1 large potato
– 1 medium zucchini
– 1 large piece of pumpkin ICEBERG SALAT CENTAR
– ¾ cup milk
– 1 branch of fresh parsley ICEBERG SALAT CENTAR
– 1 tsp. turmeric
– ½ tsp. ginger
– 1 tsp. sour cream
– Salt and pepper

Directions
1. Wash, peel and chop vegetables into larger pieces.
2. Place vegetables in a large pot, cover with water and cook for aprox. 30 minutes.
3. When the ingredients become tender, drain 3/4 of the liquid.
4. Blend vegetables and broth in blender or food processor.
5. Add milk, sour cream and spices.
6. Serve pottage warm with croutons or seeds as decoration.
